Why pancakes? Tradition! In the Episcopal Church, as in many Christian denominations, many people traditionally eat pancakes in the days leading up to Ash Wednesday as a way to use up rich ingredients like eggs, milk, and butter before the fasting period of Lent begins, where such foods might be restricted. Basically, it's a last bit of indulgence before a period of penitence.
